John Readers- Lunchbox Meatloaf


1 lbs 93% hamburger

1 egg

1 pkg instant oatmeal

1 8oz canned corn

1/4 cup BBQ sauce

1tsp minded garlic

1 tbsp minced onion

 

mix everything in a large ziploc then put in foil liner and cook.

almost no cleanup!

makes 4 servings

Mike N Melinda's Mixed mini vegetable roast with aromatic rosemary seasonings
 

2 parts: vegetables and basting mix.

  • Vegetables: Can vary ratios of these to your purpose:8-12 small potatoes 1-2 inch in size.8-12 raw cocktail onions, 1/2 to 1 inch size.Small tray of cherry tomatoes.Small tray of baby carrots. Mix as your preferred ratios each.

  • Basting mix:1/2 cup olive oil2 heap Tbsp of dried rosemary1 tsp garlic powder1 tsp sea salt1 tsp white pepper (or black)Dried lemon (True Lemon in yellow/green packets) crystal 2-3 small packets.Find it in Pilot or Love's TS by the tea and drink section.(Need this acid ingredient to liberate rosemary and garlic).Squeezing lemon onto it won't mix with olive oil.Need dried lemon crystal. Can send you a pic of the lemon packets.We keep a big handful for cooking. Better than keeping lemons.--Mix all of the bast mix ingredients together well. Mix a minute or more till you smell the rosemary a little.Put the potatoes into the mix and stir to coat them, then transfer to your baking pan.Then the same gently for the other vegetables. Spoon on remaining mix onto the vegetables.Baked foil covered 1 hour, remove the foil, switch to broil for 15 minutes to toast the surface.

 

George Johnson's Beef Enchiladas
 
  • 2 lbs ground beef

  • 10 small flour wraps

  • 2 packages of taco seasoning1

  • large onion

  • 2 small cans of enchilada sauce

  • 2 large bags of mexican and cheddar cheese1

  • can no bean chili

  • Garlic, Salt,Chives, Cummin, Sour cream,

  • Taco bell red sauce

 

In a skillet brown ground beef and chopped onion.Add taco seasoning and no bean chili.When hot scoop into a large bowlLay out tortillas and add mexican cheese and generous amount of meat mixtureIn same skillet add enchilada sauce and combine with drippings. Turn on simmer and place filled tortillas in skillet. Pour other enchilada sauce and taco bell red sauce. Cover with cheddar cheese and chives. Sprinkle garlic salt and chives and cummin. Top with sour cream. Enjoy

Diana Everitt's Gtilled Boudin

 

Boudin grilled on the Foreman for 10 minutes.

Warm pea salad - heaping cup of snow peas, 2T diced sweet onion, 1/2t of Mrs. Dash garlic & herb, salt, pepper, and 1/2t of butter. Toss peas, onions, salt, pepper, Mrs. Dash and grill on Foreman 5 minutes, melt butter over top.

Italian tomatoes - 1 lg tomato sliced, sprinkle with 1/2t Italian seasoning, dash of garlic powder, salt, pepper, and pinch of brown sugar.

Herb carameled apples - slice one apple, grill on foreman 3 minutes, toss with 1/2t Mrs. Dash garlic & Herb, heaping T brown sugar, 1/2t butter, return to grill for 5 more minutes.

Rice with mushrooms - prepare 1 box of rice-a-roni herbed wild rice mix adding 4 sliced portabellas, t of dried parsley, 1/2t of Mrs. Dash Garlic & Herb.



 

Stacie Swift Hodgin's Hawaiin Pulled Pork


prep time: 5 min

Cook time: 6 hours

makes 6 servings

1- 3-4 lbs pork shoulder

1 can crushed or cubed Pinapple (in water)

2 T grated Ginger (or 1/2 t dry)

 

put pork in crock pot

dump the pinapple on top with all the liquid

add the ginger

cook on LOW for 6-8 hours

George Johnson's Italian Dinosaur Eggs


1 package mini peppers
1 package of soft mozzarella cheese or mozzarella pearls
Spaghetti squash
Spaghetti sauce 2 cans or small jars
Italian seasoning
4 lbs italian sausage
Garlic salt or powder
Pepper

Cut off tops of peppers and clean out seeds and vains
Boil peppers to make them soft
Can also wrap in wet paper towels and microwave until soft
Drain and let cool
Stuff with mozzarella set aside
Take italian sausage press flat
Sprinkle generous amount of italian seasoning and garlic salt or powder
Wrap stuffed peppers
I roll them up in wax paper si they don't stick and then foil and freeze so they hold shape
After slightly frozen remove and pan fry until slightly brown.
You can then put in microwave safe pan and finish cooking or 400 degree oven
In same pan you browned in add spaghetti sauce and season and heat.
Cut spaghetti squash in 2 and remove seeda and place face down in microwave safe pan with about a half inch of water
Microwave squash until soft when pushing on outside
Fork spaghetti squash and make a ring of squash place 2 stuffed and wrapped peppers in center
Laddle sauce over top and top with fresh grated parm cheese and serve

Country style pork ribs stuffed in cored pineapple.
Seasoned with sea salt, tumeric, and lemon juice.
Cooking in lunch box cooker, with sliced red, yellow and orange mini peppers, red onion and glazed with honey and teriyaki

  • Cube steak,

  • two cans of cream of mushroom

  • onion soup mix

  • 3/4 cup water,

  • salt and pepper for taste

 

in the crockpot for about 4-5 hrs. Cook rice in my rice cooker.

I put a beef roast in it also put some hot sauce salt & pepper a little spoon of vinegar and cut onions potatoes carrots and a little pack of that slow cooker for pot roast and wrap it up in aluminum foil don't forget to add a little water in it to let it cook for about two hours and test it with a fork if it feels tender and falling apart it's done cook rice in a aluminum tray little bit of water in the bottom a little bit of water in the aluminum tray let the water heat up place Minute Rice in the bag and less than 10 to 20 minutes it's done don't forget to add salt Also add some celery to forgot !!!
