ED HILLS- SAUSAGE

1 lb ground chicken
1 diced jalapeno
2 strips cooked, diced bacon
1 tbsp bbq sauce
2 tbsp bread crumbs
2tsp parsley flakes
1 egg
Cheese to your liking
Salt, pepper, garlic, onion powder to taste

 

Combine all ingredients into a plastic bag, mix. Cut a hole in the bottom corner of the bag, and pipe onto aluminum foil. Roll foil, and twist the ends. Bake at 350 for 45 mins in toaster oven, or 60 mins in a PREHEATED lunchbox.

Zola's Cornish Hens with Zoodle Alfredo

2 cornish hens ( brown in aroma first )
Season with sage inside and out.
1 box zatarain's Wild rice
Brown in aroma
1 celery stick
1/4 cup Chopped onion
1/4 cup chopped mushrooms
1. table butter
add rice and cook according to box instructions
Fill hen with the wild rice
Wrap hen with some hardwood maple smoked bacon and a mushroom.
Wrap in foil and cook in the lunchbox
For 2 1/2 hrs or until juice is clear . Lunchbox varies !
1. zucchini made into veggetti .
Cook in microwave for 3 minutes
Alfredo sauce.
1. minced garlic clove .
1. cup heavy whipping cream.
1/3 cup parmigiana cheese.
1. tbs cream cheese.
Simmered in aroma till thick and mushrooms are tender.
Steamed baby carrots w/ butter.

 

Timothy Bear's Stuffed Chicken Breasts


Chicken breast stuffed with spinach and cream cheese with Herb&garlic seasoning. One table spoon coconut oil. Cauliflower and broccoli in steaming tray. All cooked in Aroma at same time for 14 minutes on steam

Red cabbage and chicken
Cucumber salad

 
1 package of chicken tenders
Small head of red cabbage cut up
1/2 red onion cut up
1/2 cup brown sugar
2 tlbs raspberry balsamic vinager (could use regular )
10 oz grape juice use about 8 oz drink the rest
A couple of grinds on the pepper grinder
2 tlbs allspice
Olive oil
I used my electric skillet
Put olive oil, chicken and allspice in pan cook for a few minutes on both sides .
Move to the side add onion and cabbage saute for about 5 to 10 minutes. Then add rest of ingredients mix it all up put cover in and simmer
I took passenger seat out and made cucumber salad while it simmered. I like my cabbage to be a little crunchy if you like it mushy simmer longer. Take lid off and turn on high to cook down sauce

Sandy Puterbaugh's Buffalo chixn on cauliflower pizza crust


1 cup very cooked cauliflower
1 egg
1cup cheese

I have a nutri bullet that I blend in..I make the crust first than add my toppings..
U can make Ut crust round or oblong
electric skillet on 300 til crispy

Enese N Evelyn Burgess's Chicken Pozole


Chicken pozole with out the hastle.... So easy to make fast and simple. 1 small can of las palmas red plain mild salsa (not the enchilada one), 4 chicken thighs (or your choice of meat), 1 small can of hominy, seasonings to taste: add dry oregano, cumin, garlic salt and pepper.

Toppings:
Red radish
Cabbage...
Onion
Limes
Avocado (optional)
Sour cream (optional)
Tostadas (optional)

 

Boil chicken till its tender (add garlic salt, pepper and oregano) once boiled
Add hominy and red sauce. Mix it well. I usually add more oregano and salt for the authentic flavor. I let it boil and then I use a strainer to remove all the fat and oregano (i just like the flavor ) enjoy with thinly sliced cabbage, chopped onions and radish. I love to add sour cream. Enjoy smile emoticon

I know my instructions might suck but just wanted to share an easy and fast recipe with out the hastle... smile emoticon

Adonna Spain's Boneless Chicken

 

Boneless chicken Breast
smoked paprika
Kosher salt
pepper
1Cup peach preserves
2 tbls Sliced green onion
2 tbls Olive oil
1 tbls Sriracha sauce
1 tbls DiJon mustard
1 tbls soy sauce
1 1/2 tsp minced garlic

Season chicke with paprika salt and pepper
grill or bake
mix every thing else together and Pour over chicken .

for asperagus
MIX 1 tbls olive Oil 1 tbls Dijon mustard 1 tbls Soy sauce and 1 tsp minced garlic
 

DAWNS GREEN CHILE CHICKEN ENCHILADAS

6-8 BONELESS SKINLESS CHICKEN THIGHS

20 YELLOW CORN TORTILLAS

2 CONTAINERS OF FROZEN GREEN CHILES ( HOT OR MILD)

2 LARGE CANS CREAM OF MUSHROOM SOUP

3 CUPS GRATED CHEDDAR CHEESE

SALT AND PEPPER TO TASTE

 

PREHEAT OVEN TO 350°

BOIL CHICKEN THIGHS ON MEDIUM HEAT FOR APPROXIMATELY 30 MINUTES UNTIL DONE.

DRAIN AND SET ASIDE

IN A LARGE SKILLET ADD MUSHROOM SOUP MIX AND GREEN CHILES ( DRAINED) ON MEDIUM.MIX UNTIL CHILES ARE MIXED WELL WITH THE SOUP MIX

REMOVE FROM HEAT AND LET COOL UNTIL YOU ARE ABLE TO TOUCH IT WITHOUT BEING BURNED.

SHRED CHICKEN THIGHS

TAKE TORTILLAS AND PLACE ONE AT A TIME INTO THE CHILE MIXTURECOATING BOTH SIDES OF THE TORTILLAPLACE COATED TORTILLA IN 9×13 BAKING DISH.

.IN THE MIDDLE OF TORTILLA ADD SHREDDED CHICKEN, GRATED CHEESE AND A SPOONFUL OF CHILE MIXTURE , ROLL UP AND LINE UP IN PAN SIDE BY SIDE,DO THIS UNTIL THE PAN IS FULL. AFTER ALL ENCHILADAS ARE IN THE PAN, COVER WITH CHILE MIXTURE, THEN TOP WITH GRATED CHEESE.BAKE IN OVEN FOR 30 MINUTES UNTIL CHEESE IS MELTED.ENJOY!!

You can top with sour cream , your choice of salsa and lettuce and tomatoes if desired :)


 

John Fleming's Monterey Jack Queso Chicken

 

season chicken , place on grill till done.

Then take a throw away tin pan , place chicken in pan , open queso , pour over chicken , place it back on grill for about 5-min to or cheese is hot and melted.

Take off grill & enjoy Caution pan maybe hot

 

 

Raymond Foose's Turkey Meatloaf

 

 

Tonight's dinner,
Turkey meatloaf
1.25lbs ground turkey (93% lean)
1 small onion
1Tbls oregano, garlic powder, onion powder...
1tsp thyme, pepper
1 pack whole wheat Ritz crackers
1/4 c ketchup
2 eggs. Mixed together and cooked in the lunchbox.

 

Garlic mashed potatoes,
3 potatoes peeled and quartered
2 Tbls butter
1Tbls garlic powder. Cooked potatoes in my new Aroma cooker, drained added butter and garlic.

Peas & carrots steamed in Aroma as well.

 

 

Rudy Rios's Chicken

 

 

1 package boneless chicken breasts, thawed
1 can Rotel, drained
1 can black beans, drained & rinsed ...
1 can corn, undrained
1 package cream cheese

 

Thrown in the Crock Pot as pictured for 5 hours on high. It came out great, but like I said it was a little more soupy than I expected so the next time I make this I think I'll drain the corn as well and add rice to begin with.

 

 

 

Lisa Morway's Parmesan chicken drumettes.

 

 

1 pkg drumettes
1/2 cup butter
About 5 oz parmesan
Melt butter, mix in parmesan, coat drumettes, place on pan, bake at 350 for 45 to 60 minutes. Let rest for 15 minutes. Enjoy.

Victor A. Martinez's zucchini chicken lasagna

2 large zucchini.
5 slices of garlic bread 
1 pound ground chicken meat.

four cheese marinara sauce no sodium.
mozzarella cheese no sodium.
12 inch baking pan with high rim

boil zucchini for approximately 20 minutes or until tender then slice small circles.
In a separate pan cook your chicken meat add pepper once done place to the side.
take your sauce and spread a thin layer on the bottom of your pan. now start laying the bread the bottom of the pan then add your chicken meat then the zucchini cover with sauce then cheese. now repeat the process. once done with this cover with aluminum foil place in your oven for 35 minutes at 350 degrees. once done remove foil place back in oven and cook for another 20 minutes. once done remove and serve hope you enjoy.. hope you enjoy 

Raymond Foose's  Stewed Chicken , mashed potatoes, and bacon gravy

you brown bacon in a Dutch oven, then remove it from the pan then brown the chicken in the bacon fat, remove chicken and drain the excess oil out, then add onions and sauté until brown. Add chicken and bacon back in and some pepper (only add salt if needed because of the bacon) add 2 cans of chicken stock bring to a boil then reduce to simmer and cover for one hour. Serve with rice or mashed potatoes. (Remove chicken and and flour slurry if you want homemade gravy.
