Lisa McKay's Spaghetti Squash

1 Spaghetti Squash
1 cup of Gruyere Cheese
rosemary, parsley, garlic, black pepper (amount to taste)


cut spaghetti squash in half, steam 1/2 at a time for 15 minutes each half,

scooped out the delicious innards,
added a cup of gruyere cheese, rosemary, parsley, garlic, black pepper,
mixed it up, put it back in the shell and steamed for an additional 5 minutes.

 

 

Shannon E Green's Spicy Balsamic Beet Noodles

beet

1/3 cup balsamic vinegar

salt and pepper

red pepper flakes

spiralize beet into wide noodles. Add to skillet with balsamic vinegar, salt and pepper

Toss and cover with lid and let steam for 5 minutes.

Beets should be tender but not mushy

add red pepper flakes to taste

1box beef broth
2tbsp sesame oil
Fish sauce(optional)
Soy sauce to taste
Beef strips
Bamboo
Waterchest nuts
Napa cabbage chopped
Bean sprouts
Green onion
Cilantro
Chopped garlic
Garlic chili sauce

In pot add sesame oil.. Beef..brown beef add all other ingredients til hot..add zucchini noodles last few mins..garnish with green onions n cilantro n garlic chili to taste

If using rice noodles cook to pkg directions add to soup
 

Victor A Martinez's Spinach mushroom lasagna

 
8x8 foil pan
1 pound turkey meat
1 package of mushrooms
1 cup of spinach
2 cups of pepper jacks mozzarella cheese
2 cups of vegetable bow tie pasta (percooked).
1 jar of your favorite pasta sauce

Layer your pan with nonstick spray. I start off with a layer of spinach then turkey meat add mushrooms then pasta then covered with a thick layer pasta sauce and cover with cheese and repeated the process again. preheat your oven to 350 degrees and bake for 40 minutes. Makes around 4 services hope y'all enjoy. you can layer your ingredients anyway you want. Hope y'all enjoy the recipe

 

 

Victor A. Martinez'sChickens Turkey stuffed bell peppers recipe.
 

5 chicken strips cut and slice into small pieces.
1 turkey patty chopped up.
1 small onion chopped in dice.
red yellow an orange mini sweet bell peppers sliced and chopped.
1 small jalapeno pepper for flavor.
garlic and onion powder Mrs Dash.
1/4 cup A1 sauce.

Place all your ingredients together in your cooker once done place to the side. take a large bell pepper of your favorite. cut down center remove the inside. once done place cheese in the bottom of your bell pepper and then add your ingredients then add more cheese. place in oven at 350 degrees and bake for 35 minutes. Once done place on a plate with your favorite size and enjoy. once again you can add whatever you like to your taste enjoy.
 

Shannon E. Green's Sweet Potato and Black Bean Casserole
 

1 sweet potato (diced) ...
1 can tomatoes (drained)
1 can black beans (rinsed & drained)
1/2 red onion (diced)
Cilantro
Cumin
Corn tortillas
5 oz cheddar cheese (shredded)
Chorizo (optional)
Avocado (optional)

 

Boil sweet potato. Drain & add tomatoes, black beans, chorizo, onion & a handful of chopped cilantro. Mix well. In bread pan layer 2 tortillas on bottom, then a layer of the sweet potato mixture, then cheese & repeat. I cooked mine for a little over an hour in the lunchbox cooker. For a more layered look for serving doubling of the tortillas & shorter cooking time would probably work. Top with avocado & more cilantro.


 

Zola's Breakfast Burrito
 

 
Put the aroma on steam setting !
Add
1. Slice bacon pieces off starting on top of slab (desired amount) I used 3/4 of the pack.
2. Dice up a sm tomato
3. Slice up 3 mushrooms or more
Steam till bacon looks cooked , approx 5 min
5. Add 4 eggs
6. Add desired amount of spinach stir and close close lid stirring as needed to scramble till done !
Place in a regular or low carb tortilla or on a plate
Add salsa or avocado, favorite cheese, salt & pepper to taste and enjoy

Fat Free- Sugar Free

Carmel Apple Cake

 

Mix:

1sugar free applesauce single serve cup
One third cup fat free egg beaters
One half teaspoon baking soda...
One half teaspoon cinnamon
4 packets truvia
1teaspoon vanilla
4 tablespoons coconut or rice flour
1 peeled and diced apple
Bake in sprayed pan in lunch box oven 45 minutes
Invert when cooled and frost with sugar free carmel... This cake is more like a bread pudding consistency


 

George Johnson Orange Chicken
  • 2 large chicken breasts
  • 2 small bags peapods
  • 1 onion
  • 1 green pepper
  • 2 roma tomatoes
  • 1 snall can or 1 cup fresh chunked pineapple 
  • 1 small jar orange marmalade 
  • 3/4 cup sweet baby rays
  • 2 cups of minute rice
  • Butter 
  • Water
  • Salt and pepper to taste

First cook peapods in electric skillet with a splash of water and 5 pads of butter. 
Remove set aside
In same water and butter cook chicken onion and green pepper. While thats cooking in a bowl empty full jar of marmalade and add sweet baby rays and mix.
When chicken is cooked add tomatoes pineapple and sauce
On a plate put rice in a 1/2 cup measuring cup and press in turn over to make a mold of rice
Spoon peapods around rice and spoon chicken and sauce around rice and serve salt and pepper to taste
